Chicken Biryani

Fresh mint, chicken breast, green chilli, onions, cardamom, cloves, red chilli, garam masala, star anise, white yoghurt, bay leaves, cinnamon, saffron, garlic, lemon juice.
Procedure
Cut the chicken breasts into cubes and proceed to season/marinate the meat with all the remaining ingredients;
Vacuum-pack with a thickness of approx. 2/3 cm and cook with the MultiFresh® Next low-temperature cooking cycle:
Preheat to 55°C
Phase 1 reheat at 55°C for 3h
Stage 2 warm 65°C for 1h30m
Phase 3 warm 47°C for 2h
Phase 4 cold -7°C for 30m
Phase 5 cold 0°C for 1h
Benefits
