Branzini da circa 500 g, pomodori datterini, arancia, olio extra vergine di oliva, maggiorana fresca.
Procedure
Squamare i branzini, sfilettarli e privarli delle spine. Conservare in conservatore positivo. Lavare i pomodori, incidere la buccia a croce e sbianchire in forno a vapore per un minuto quindi abbattere subito con ciclo delicate +3°C.
