
Pumpkin Cheesecake

Eggs, Cream, Pumpkin puree, Pumpkin spice, Lemon juice, Vanilla, Sugar, Cream cheese.
Procedure
Set MultiFresh® Next to a low-temperature cooking cycle using these parameters:
Preheating to 85°C
1st stage: 85°C to 57°C core
2nd stage: 73°C to 67°C core
3rd stage: From -7°C air to 15°C core
4th phase: From -40°C air to -17°C core
Holding -20°C core
Add the sour cream, eggs, double cream, vanilla, lemon juice and continue stirring until smooth. Add the pumpkin puree and pumpkin pie spice;
Fill 4 oz souffle dishes ¾ full and place them on the baking trays;
Ensure that the core probe is firmly in the centre of one of the ramekins.
Transfer to the preheated MultiFresh® Next;
After completion of the cycle, place a lid on each souffle cup and store in the freezer.
