Tell us about your operation

We are at the Combelaville Central Kitchen, a municipal facility where we prepare nearly 2,100 meals every day.
Our meals are designed for all age groups, from infants as young as four months old to schoolchildren and seniors up to 101 years old.

Our mission is to guarantee safe, high-quality meals while managing large volumes efficiently.
In recent years, our activity has expanded significantly, especially with the introduction of home meal delivery, which required a more advanced and reliable production organization.

 

Which IRINOX equipment do you use in your facility?

For over a year, we have invested in an IRINOX MultiFresh® Next XXL blast chiller, a multifunctional unit that plays a central role in our production flow.

This equipment allows us to:

  • blast chill and blast freeze,
  • manage overnight cooking,
  • hold food at controlled hot temperatures,
  • and manage chilled holding safely.

We chose IRINOX because our production volume requires high capacity, reliability, and multifunctionality, especially to support overnight cooking and precise temperature control.

 

How have IRINOX solutions improved your daily work?

Before introducing IRINOX, our operation was mainly based on hot meal delivery.
With the launch of home meal delivery on May 1st, 2024, we needed a dependable blast chilling solution to guarantee food safety, traceability, and operational efficiency.

Thanks to IRINOX:

  • our traceability system is now fully controlled,
  • we can deliver meals faster and more efficiently,
  • production workflows are smoother and better organized.

The multifunctional capabilities of the MultiFresh® Next XXL also open new possibilities for the future — such as producing homemade yogurts using the fermentation cycle.
