Tell us about your business
My name is Elena Terrasson, co-manager of Maison Terrasson.
Together with my husband Geoffroy Terrasson, a master baker and pastry chef trained with Les Compagnons du Devoir, we run two bakeries: one in Lyon, near Place Bellecour, and one in Sainte-Foy-lès-Lyon. A third location may open soon.
Our business has grown quickly thanks to a strong focus on quality, technical rigor, and a well-organized production structure.
Every day, we work to offer artisanal products that are consistent, precise, and made with care — even as volumes increase.
Which IRINOX equipment do you use in your laboratory?
We chose IRINOX, and especially the MultiFresh® Next, for its exceptionally wide temperature range, from -35°C to +80°C.
In our daily production, we use it for:
- controlled proofing of croissants,
- rapid chilling of large batches and volumes.
Its consistency and reliability are truly impressive.
In addition, we use a CP Next holding cabinet: once products are chilled, they are transferred directly into storage.
What really stands out is the perfectly uniform temperature throughout the cabinet, something not all machines can guarantee.
