Pausa Bar & Cookery was created with a clear vision: reinterpret Italian cuisine through a modern lens while staying true to regional traditions and seasonal ingredients. As a true scratch kitchen, everything is produced in-house, from pasta to desserts, with a constantly evolving menu.

Tell us about your business
My name is Andrea Giuliani, Executive Chef and Co-Owner of Pausa Bar & Cookery.
Our restaurant is a fusion of Italy’s twenty regions, interpreted through a modern perspective. As a scratch kitchen, we make everything in-house, continually refreshing our menu and working with new ingredients every day.
We serve about 1,600 guests per week, employ a team of 60, and start production at 4:30 a.m. to consistently deliver high-quality dishes.
