Ingredients

  • Fresh mint
  • Chicken breast
  • Green chilli
  • Onions
  • Cardamom
  • Cloves
  • Red chilli
  • Garam masala
  • Star anise
  • White yoghurt
  • Bay leaves
  • Cinnamon
  • Saffron
  • Garlic
  • Lemon juice

     

Procedure

  • Cut the chicken breasts into cubes and proceed to season/marinate the meat with all the remaining ingredients;
  • Vacuum-pack with a thickness of approx. 2/3 cm and cook with the MultiFresh® Next low-temperature cooking cycle:
    • Preheat to 55°C
    • Phase 1: Reheat at 55°C for 3h
    • Phase 2: Warm at 65°C for 1h 30m
    • Phase 3: Warm at 47°C for 2h
    • Phase 4: Cold at -7°C for 30m
    • Phase 5: Cold at 0°C for 1h
