Ingredients

  • Fresh cream
  • Sugar
  • Egg yolk
  • Vanilla
  • Salt

 

Procedure

  • Heat the cream without bringing it to a boil. Slowly pour it over the previously mixed egg yolks and sugar, stirring gently.
  • Add the vanilla and a pinch of salt.
  • Divide the mixture into single-portion glass jars and cook in the MF Next, setting the temperature to +85°C, fan speed 2, for 90 minutes. At the end of the cooking process, cool rapidly to +3°C.
  • To serve, sprinkle the surface with brown sugar and torch until a caramelized crust forms.

At the end of the cooking cycle, the MF Next blast chiller automatically starts the cooling process. Any subsequent vacuum sealing of the jars significantly increases shelf life. Once cooked, the product can also be frozen.
