A business led by Salvo and Peppe, who turned their dream into reality by selling Sicilian fish in Emilia, purchasing it directly from fishermen’s boats without any intermediaries. Their goal is to bring fresh, seasonal fish—sometimes lesser-known or humble varieties—to Emilia’s tables every single day.

What does freshness mean to you?

According to our philosophy, a fish can truly be considered fresh only if no more than five days have passed since it was caught. That’s why all the seafood we store in our MultiFresh® remains completely intact in its natural state.

Why has Irinox changed your life?

Thanks to my MultiFresh®, I can not only lower the temperature to preserve the catch in the best possible way, but also cook it at low temperature, allowing it to retain its natural flavor and authenticity.

The distinctive feature of our frozen products is the integrity of their organoleptic properties. The rapid freezing process, using the Irinox blast chiller, of fish that is still alive and in seawater, allows us to offer a frozen product of the highest quality—safe, more cost-effective than fresh, and capable of preserving the nutritional value and characteristics of freshly caught fish for several months after the catch.

Which product best represents your business?

We offer our customers several product lines: fresh seasonal fish, live shellfish and crustaceans, a kids’ line (dedicated to the little ones), the “Ready to Cook” line—both fresh and frozen with MultiFresh®.
But what we care about the most are the crudités—raw fish dishes that require special attention and are blast chilled according to regulations at -40°C for proper sanitization.
