Tell us about your business

My name is Elena Terrasson, and I am co-manager of Maison Terrasson.
Together with my husband Geoffroy Terrasson, a master baker and pastry chef trained with Les Compagnons du Devoir, we run two bakeries: one in Lyon, near Place Bellecour, and one in Sainte-Foy-lès-Lyon. A third location may open soon.

Our business has grown rapidly in recent years thanks to a structured organisation, controlled production processes and a constant commitment to delivering high-quality artisan products.

 

Which IRINOX equipment do you use in your laboratory?

We chose IRINOX, and especially the MultiFresh® Next, for its exceptionally wide temperature range, from -35°C to +80°C.
This flexibility allows us to use the same machine for multiple processes, including:

  • controlled proofing of croissants
  • rapid chilling of large production volumes

To complete the workflow, we also use a CP Next holding cabinet, which allows us to store products immediately after blast chilling.
What truly impressed us is the uniform temperature distribution throughout the cabinet, ensuring perfect consistency something not all machines can guarantee.
