This pasta factory from Bologna is led by Lorenzo Scandellari, who keeps alive the tradition of fresh egg pasta and the memory of his grandmother, the great Rina.

Lorenzo, what does freshness mean to you?
At Sfoglia Rina, we’ve always paid close attention to the selection of raw ingredients. That’s why we choose local or regional products. Day after day, our sfogline (pasta makers) get their hands into the dough to produce, following ancient tradition, a wide range of products that are always genuine and full of flavor.
This is what freshness means: being able to preserve the true quality and authenticity of artisanal products every single day, by following the old family craft and respecting the raw materials.

All our products are blast chilled and stored using IRINOX blast chillers and holding cabinets. The IRINOX system has helped us extend the freshness of our products and maintain their quality. It has allowed us to optimize production processes and better manage our workflow.
