Continuous loading without freezing
IRINOX devices enable flexible pre-production of all components and preserve the freshly cooked quality of the products. The food comes out of the combi steamer at the perfect cooking point and should be placed directly, piping hot, into the IRINOX blast chiller. The devices are designed so that continuous loading of piping hot batches is possible without interrupting an ongoing cooling cycle. This is only possible because the temperature inside the IRINOX blast chiller always remains in the positive range. Unwanted freezing of products during blast chilling is thus excluded. Another plus for food quality. Continuous loading into the blast chiller is crucial for a smooth process, as the cooking time is significantly shorter than the cooling time, and otherwise the finished cooked batches would pile up in front of the blast chiller, losing cooking quality by the minute. IRINOX blast chillers are in a class of their own.
Comparing performance criteria is worthwhile
“Which device suits a particular kitchen depends on the kitchen concept and the quantities to be blast chilled or shock frozen,” says Klotzsche. “To find the right device size, the existing combi steamers and other cooking devices also play a role. IRINOX offers a network of specialist consultants who assess these factors and then make a recommendation. It’s worth comparing the performance criteria of blast chillers, because those who buy quickly and cheaply often end up buying twice.
